20 Gluten-Free Recipes to Make for Dinner this Month

While I was reflecting on the last decade as a whole, I realized that one of the biggest and most important shifts I made was in regards to my health. Specifically, the food and drinks I was consuming every day.

10 years ago, my diet mainly consisted of Cheez-Its, Combos, Hot Pockets, Vanilla Bean Frappucinos, and Vodka. Seriously. Sometimes I wonder how I even functioned on basically zero nutrients.

When Sam and I first started dating, our diet was fairly poor and we survived mostly off of cheap snacks like these. Little by little though, our mindset shifted and we began to value quality, home cooked meals and cozy nights in together over sugary cocktails and greasy pizza at 2am.

About 2 and a half years ago, we decided that we wanted to finally tackle our health together and work on actively improving it. That lead us to a food intolerance test (I wrote about our experience here) where we discovered that Sam is intolerant to wheat, among other things. I am also intolerant to eggs, pork, carrots, and lentils.

Long story short, fast forward to now and we have both cut about 95% of gluten out of our diets (after cutting out only wheat first). We have experimented with different foods and our symptoms over the years and came to the conclusion that gluten as a whole makes us both feel sluggish, achey, bloated, irritable, and overall like garbage.

It has been a slow and steady journey to say the least, but we have learned to enjoy cooking new recipes together that would make younger-us scoff in disbelief.

Now, one of my goals this year is to cook more at home (at least 5x week), and one way to do that is for me to get excited about what I’m making! I love challenging myself to learn new recipes and skills, and play around with dietary swaps in the kitchen.

So, without further ado, I am sharing a roundup of 20 gluten-free recipes to make for dinner this month! Some are our personal easy go-to’s and others are recipes I’ve been dying to test out myself:
