Copycat Warm Bowl from SweetGreen
Raise your hand if you’ve been embracing your kitchen now more than ever! Personally, I have been enjoying the challenge of cooking most of our meals at home. Not only has skipping take-out and frequent restaurant meals been saving us a ton of money, but I also feel much healthier overall.
Cooking at home certainly doesn’t have to translate to “bland” or “boring” though. Sam and I have been soaking in this time while trying out new techniques together like grilling avocados (for an added smoky flavor in dishes) and peaches (for a fancy twist to top with vanilla ice cream and honey).
We have collected so many great cookbooks in the 10 years that we’ve been together and, even more than that, taken photos of menu items and meals we’ve ordered over the years in the hopes of recreating them at home someday.
In fact, that is exactly where this idea for a warm rice bowl came from! We were craving our go-to SweetGreen order a few weekends back and since we don’t have one in the area we moved to, we decided to finally master the art of making our own (mostly from staples we had already bought from the grocery store).
Now, because this recipe is so versatile, I am going to break the formula down into 6 simple parts for you: Start with a solid base (rice or salad mix), then add a protein (chicken, steak, sausage, fish, shrimp, or tofu), a creamy vegetable (roasted sweet potato and/or sautéed mushrooms), smoky flavor (grilled avocado or asparagus), crunchy topping (bacon, croutons, nuts/seeds, or tortilla strips), and top with a dressing (pesto, balsamic vinaigrette, or hot sauce).
The most incredible thing about this formula is that you can customize it to fit whatever dietary needs you have! Whether you are dairy-free and gluten-free like me, vegan, vegetarian, or following a diet like Whole 30 or Keto, you can make this recipe work for you.
It is also great for meal prepping because you can make a ton of each ingredient and save them in containers in the fridge to switch up the bowl combination. This way you’ll have an exciting, healthy, and quick meal every lunch or dinner!

How to Recreate a Warm Bowl from SweetGreen at Home
Ingredients:
1 Chicken Breast or Thigh
1 Cup Wild Rice
1/3 Package of Thick Sliced Bacon
1/2 Sweet Potato
1/2 Cup Sliced Baby Bella Mushrooms
1/2 Avocado
Pesto (or other dressing)
Olive Oil
Sea Salt, Pepper
Paprika (optional)
Garlic Powder (optional)
Parmesan Cheese (optional)
Instructions:
Preheat oven to 425F. While heating, cube sweet potato into bite-sized pieces. Drizzle olive oil onto aluminum foil on baking sheet so potato does not stick. Add cubed sweet potato, sprinkle sea salt, pepper, paprika, and garlic powder to taste. Put in oven for about 30 minutes, or until crisp on the edges.
Cook wild rice on stovetop using box instructions.
Cook bacon on stovetop until crispy. Once done, place on paper towel lined plate to remove excess grease. Chop into bite-sized pieces.
In a separate non-stick pan, heat 1 tbsp olive oil. Add sliced mushrooms and sauté on medium-high heat until moisture has evaporated and mushrooms turn dark reddish-brown with golden spots, about 8-12 minutes.
Season chicken with same combination of spices from sweet potato. Grill for about 7 minutes on each side, or until cooked through.
Slice avocado in half. Sprinkle with sea salt and pepper. On pitted side, grill face down for about 3-5 minutes.
Once all ingredients are cooked and ready, begin assembling bowl. Start with wild rice on bottom, add sautéed mushrooms, sweet potato, bacon, chicken, and avocado. Top with pesto (or dressing of your choice) and parmesan cheese (if desired). Enjoy!
